After cutting all the white meat from a broasted chicken, there will still be plenty of meat left from the bones, wings and legs. Remove all the remaining meat and cut them up in cubes. This is a delicious pie that everyone will likely to eat even children.
4 large potatoes, peeled, cooked and drained
1 tablespoon butter or margarine
¼ cup sour cream
¼ cup minced parsley
¾ teaspoon salt
½ teaspoon black pepper
1 ½ cup cooked chicken cubes
¼ cup chopped onions
1 tomato, chopped
4 large carrots, peeled and chopped
1 small can of mushroom
1 small can of peas
1 package frozen corn
½ cup cream cheese
1 tablespoon soy sauce
I/2 can chicken broth
Salt and pepper to taste.
Preheat oven to 350F and set out a 9-inch pie plate. Mash the potatoes, mixing the butter, sour cream, parsley, salt and pepper. Set aside.
In a skillet, saute the onions and the tomatoes in the cooking oil. Add the carrots, mushrooms, and the soy sauce. Add the chicken broth and chicken, peas and corn. Cook for about 10 minutes, add the cream cheese, season with salt and pepper.
Spread the mixture in the baking dish, Using a spatula, spread the mashed potatoes on top of the pie. Sprinkle with paprika. Bake uncovered for 15 minutes. Serve with green salad.
