Our Puget Sound water  has plenty of salmon.  One very popular  catch by our fishing sportsmen are the Sockeye salmon.It is considered the most flavorful and flexible of the family.of salmon.

Here I fillet the sockeye salmon given to me by my son in law.  I baked it in the Apple Butter I canned from our apple tree.

Salmon  with Apple Butter

1 salmon, fillet, removing the  ribs.
1/2 cup of butter
2 large onions, thinly sliced
salt and pepper to taste
1 cup apple butter

Preheat oven to 375 degree.  On a foil lined baking dish put the butter and onions and place in the oven . Let the onions cook for 5 minutes.  Add salt and pepper
Remove baking dish from the oven and add the salmon on top of the butter and onions.  Spread apple butter on top evenly.  Return to the oven and cook for 20 to 25 minutes until salmon is flakes.

Serves 8  


Unsalted butter and onions

Brush apple butter on top
